Bia Fresh Artisan Pasta
BIA Sicilian artisanal fresh pasta is produced in Resuttano (CL), an uncontaminated agricultural center in the Sicilian hinterland, and is obtained using the best varieties of Sicilian durum wheat grown and milled a few kilometers from the factory.
From field to table
The semolina we use, certified UNI EN ISO 22005 “From Field to Table,” guarantees the authenticity of the selected Sicilian grains and the identification of the place of production, as well as the transparency and control of all stages of the production process, from field to table, for a healthy, safe, and authentic final product. Our production, characterized by rough bronze die-casting, ranges from long to short shapes, to specialty pasta.
We also produce organic pasta, controlled and certified in accordance with EC Regulation 834/2007, as well as whole-wheat semolina pasta, which is lighter and more digestible.

Single pasteurization
A heat treatment that is applied only to the freshly formed product (single pasteurization process), and not to the already packaged product (double pasteurization, typical of almost all “industrial” fresh pasta present in large-scale retail trade.
